
~ Rapid Reuben from A Man, A Can, A Microwave
Well this recipe made me very skeptical at first because when I opened the corned beef it smelled and looked like canned dog food. I decided we would at least give it a try though because I told Jennifer that I wanted to try everything in the cookbooks that we have. So we gave it a shot. For taste I would give it a 9/10 and it re-heats at about a 9/10 even after three or four days of refrigerator time. I would also have to give it a 9/10 in terms of preparation. I took one sandwich to my friend and co-worker Mikky and she stated that she also liked it. She had it for breakfast or dinner depending on how you look at the time considering it was after a night shift at work. I highly recommend giving this a try if you like Reuben sandwiches and you are strapped for time. It is quick, simple, and good.
Ingredients: 12 oz. can corned beef (cut top to bottom into 6 slices), 1/2 14 ounce can sauerkraut (well-drained), 1/2 cup Thousand Island Salad Dressing, 12 slices of Rye bread (toasted), 1/2 8 ounce package of sliced Swiss cheese.
Recipe: Place the corned beef slices in a single layer in a 2 quart microwave safe dish. Top with the sauerkraut and cheese. Cover tightly with plastic wrap and nuke for 1 to 2 minutes, or until the cheese melts. Spread the dressing on the toast and use a spatula to lift the hot corned beef slices onto 6 of the toast slices. Top with the other pieces of toast and chow down.

i thought this sandwich was great. even re-heated!
i’ve never had corned beef before though and would like to try a version other than “canned”. : ))
